Cooking with Frida At the Edible Academy Bean Pascal RECIPE INSPIRED BY Mexico: The Cookbook by Margarita Carrillo Arronte INGREDIENTS SERVES 8–10 1 cup sesame seeds, toasted 2 ¼ cups (9 oz/250 g) masa harina 2 cups (14 oz/400 g) cooked great northern or other white beans, drained ½ onion, halved 2 chayotes, peeled, cored, and diced 1 bunch squash flowers, pistils removed 3 tablespoons finely chopped cilantro (coriander) 1 tablespoon finely chopped mint 6 epazote leaves, finely chopped Sea salt INSTRUCTIONS Sponsored by In affiliation with Grind the sesame seeds in a blender or spice grinder. Put the masa harina and ½ cup (4 fl oz/120 ml) water into a food processor or blender and process until smooth. Add the ground sesame seeds and process until thoroughly combined. Pour 4 ¼ cups (1 ¾ pints/1 liter) water into a saucepan, add the beans and onion, bring to a boil, and simmer for 20 minutes. Add the masa harina mixture and cook for an additional 10 minutes, stirring consistently to thicken the soup. Add the chayotes, squash flowers, cilantro (coriander), and mint, and season to taste with salt, then cook for an additional 5 minutes. Remove the pan from the heat. Ladle into soup bowls, sprinkle with epazote, and serve immediately. Cocinando con Frida en la Academia de Comestibles Pascal de frijol RECETA INSPIRADA EN EL LIBRO Mexico: The Cookbook de Margarita Carrillo Arronte INGREDIENTES PARA 8–10 PERSONAS 1 taza de semillas de sésamo, tostadas 2 ¼ tazas (9 oz/250 g) de masa harina 2 tazas (14 oz/400 g) de frijoles great northern cocidos u otros frijoles blancos, escurridos ½ cebolla, cortada a la mitad 2 chayotes, pelados, deshuesados y cortados en cubitos 1 manojo de flores de calabaza sin pistilos 3 cucharadas de cilantro finamente picado (coriander) 1 cucharada de menta finamente picada 6 hojas de epazote, finamente picadas Sal marina INSTRUCCIONES Patrocinado por En asociación con Moler las semillas de sésamo en una licuadora o en una licuadora de especias. Agregue la masa harina y ½ taza (4 fl oz/120 ml) de agua a un procesador de comida o a una licuadora hasta que esté parejo. Añada las semillas de sésamo al procesador hasta que queden bien combinadas. Vierta 4 ¼ tazas (1 ¾ pintas/1 litro) de agua en una sartén, agregue los frijoles y la cebolla y hiérvalos a fuego lento durante 20 minutos. Agregue la mezcla de la masa harina y cocine por 10 minutos más, revolviendo consistentemente hasta espesar la sopa. Agregue los chayotes, las flores de calabaza, cilantro (coriander) y la menta, agregue sal al gusto y cocine durante 5 minutos más. Retire la sartén del fuego. Sirva la sopa con un cucharón en platos soperos, espolvoree el epazote y sirva inmediatamente.
