KALE SALAD SERVES: 6 as a side or salad, 2-3 as an entree PREP TIME: 15 minutes TOTAL TIME: 25 minutes To judge the amount of kale: look for 16-20 leaves that are about a foot long each. Many grocery stores sell smaller bundles that have 8-10 leaves. Dinosaur kale is often larger and can easily be substituted. Curly green kale is what we used. The salad will keep overnight in the fridge without becoming soggy because the kale is not cooked, so if you have leftovers, don’t worry! As you massage the kale, it will reduce in volume by 1/3 to 1/2, so don’t panic at the initial volume. The stems, which are somewhat unpleasant raw, can be saved and sautéed, and added to another dish. The dressing here is a simple viniagrette mixture: all viniagrettes start with a ratio of 3 parts oil to 1 part vinegar, and can be adjusted to use more vinegar to taste. 2-3 bunches of kale (or 1 large bunch of kale, depending on the size) 1 teaspoon sea salt 1/3 cup of sunflower seeds 1/4 cup of diced red onion 1/3 cup of dried cranberries 3/4 cup diced apple (about 1/2 apple) 1/4 cup olive oil 2 tbsp. of apple cider vinegar 1) Pull the kale off the stems and wash. Spin or pat dry. 2) Separate the kale into bite-sized pieces (either tear it with your hands or cut it with a knife, whichever is your preference). 3) Put the kale in a very large mixing bowl. Add salt, and massage with your hands for a few minutes until the kale is a darker green and looks/feels wet. 4) Dress with oil and vinegar and toss. Taste. If you want more acidity, add about 1/2 teaspoon of vinegar at a time, stirring each time, until it reaches your desired flavor. 5) Add sunflower seeds, apple, and cranberries, and toss again. Serve. Muchas tiendas de comestibles venden manojos pequeños de col rizada que tienen 8 a 10 hojas. También se puede sustituir la col rizada por la col rizada de dinosaurio la cual es más grande. ¡La ensalada se conserva muy bien en el refrigerador, por lo tanto si sobra ensalada, no se preocupe que aun servirá al siguiente día! Mientras masajea/amasa/frota la col rizada, el volumen de la col se reducirá de 1/3 a 1/2 de tamaño. Los tallos, qué están de alguna manera desagradables, se pueden guardar y añadir a otro platillo. El aderezo es una mezcla muy sencilla: todos condimentos empiezan con una proporción de 3 partes de aceite, a 1 parte vinagre y se puede ajustar al gusto. 2-3 ramos de col rizada (o un ramo grande, depende del tamaño) 1 cucharilla de sal de mar 1/3 taza de semillas de girasol 1/4 taza de cebolla roja, cortada en cuadrados 1/3 taza de arándanos secos 3/4 taza de manzana, cortada en cuadrados (más o menos un 1/2 de manzana) 1/4 taza de aceite de oliva 2 cucharadas de vinagre de manzana 1) Dele vuelta a la col rizada para quitar los tallos y lávela. 2) Separe las hojas de la col rizada (puede arrancarlas con sus manos o cortarlas con un cuchillo la col rizada hasta que los pedazos estén del tamaño de un bocado). 3) Ponga la col rizada en un recipiente grande. Añada sal, y masajee/ amase con sus manos por unos minutos hasta que la col rizada tenga un color verde oscuro y se vea/sienta húmeda. 4) Prepare con aceite y vinagre y después mezcle y pruebe. Si quiere más vinagre, añada media-cucharadita cada vez, al gusto. 5) Añada semillas, cebolla, manzana, arándanos, y mescle todo nuevamente. ¡Finalmente, está lista para servirse!
