Fats are a source of energy. They also help to keep your skin and hair healthy. Fats help absorb vitamin A, D, E and K that your body would not be able to use if fat was not available to transport them. The key is to know which fats are better than others. What fats should you limit in your diet? Diets high in trans fat and saturated fat have been linked to chronic disease such as coronary heart disease. To reduce saturated fat consumption, choose leaner cuts of meat such as loin and round cuts. Remove skin off poultry prior to cooking, choose low fat dairy products, and select low fat versions of your favorite treats. Trans fat is primarily found in fried items, desserts, and spreads. Read food labels and ensure they are trans fat (Hydrogenated oils) free. What fats should you increase? Unsaturated fats can improve blood cholesterol levels, ease inflammation, stabilize heart rhythms, and play a number of other beneficial roles. Nuts such as walnuts and flaxseed, vegetable oils such as soybean, canola and olive oil and fish such as trout, herring and salmon are sources of unsaturated fats. Alan L Coker, R.D.
