Bienestar Health Program Bienestar Family Times Diabetes is a dangerous disease caused by the body either not producing insulin or unable to use insulin properly. Our bodies convert the food and drinks we consume into glucose. Insulin is needed to transport glucose to the necessary parts of our bodies to use for energy. The American Diabetes Association estimates there are 20.8 million diabetics in this country and 6.2 million people with diabetes that are unaware they have the disease. There are also an estimated 41 million people with pre-diabetes, a condition of elevated blood sugar levels not yet high enough to be termed diabetic. Having diabetes can cause complications such as: • Heart attacks/heart disease • Stroke • Blindness • Kidney disease • Amputations • High blood pressure Making the problem worse is that every year more and more children are now developing diabetes. The Bienestar Health Program is a school-based program that is designed for students in grades kindergarten through eight grade by: • Decreasing dietary fat • Increasing dietary fiber (fruits, vegetables and whole-grains) • Increase physical fitness • Prevent overweight/obesity The Bienestar Family Times is an important component of this program. The Bienestar Family Times is a newsletter that gives the parents of children in the program the opportunity to learn the same concepts and have the same diabetes prevention knowledge their children are receiving at school. This enables the entire family to practice and use the concepts and ideas being learned at school. Topics in the Bienestar Family Times focus on the same ideas the children are learning in school such as: • Signs and symptoms of diabetes • Physical activity • Eating out • Serving sizes • Fiber, fats, and carbohydrates The Bienestar Family Times contains tips and activities for the whole family including healthy recipes, physical fitness activities for the entire family, food diaries, and daily work out logs. Diabetes (Type 2) is a very serious and dangerous disease. Diabetes occurs when there is too much sugar (glucose) in the blood. There are two types of diabetes, Type 1 and Type 2. Type 2 diabetes occurs mainly in overweight adults and certain minorities. The really bad news is that diabetes is now developing in young children. The good news is that the Bienestar Health Program is here to stop diabetes. The Bienestar Health Program is a school-based diabetes prevention program that will teach families: News Flash • About 1 out of every 20 Americans has diabetes. • Hispanics are more at risk for developing diabetes. • 24% of Mexican-Americans have diabetes. • More and more children are at risk for developing diabetes (especially Hispanics). • By the year 2020, 1 out of every 5 American children will be of Hispanic origin and the number of these children diagnosed with diabetes continues to rise. 1302 S. St. Mary’s San Antonio, TX, 78210 Telephone: 210-533-8886 Fax: 210-533-4107 www.SaHRC.org • How to prevent diabetes • The importance of healthy eating habits • Why exercise is so important • How to control weight Causes of Diabetes There are certain risk factors or causes that will increase the chances of getting diabetes. Uncontrollable risk factors are causes we cannot change, like heredity or age. Controllable risk factors we can change. For example, we can control how much fatty foods we eat and whether we exercise or just sit around and watch television. These are the causes or risk factors for developing diabetes: • Heredity: If you are Hispanic, African-American, Native-American or Asian, you have a higher risk of developing Type 2 diabetes; the risk is even greater if you have parents with diabetes. This is an uncontrollable risk factor. • Age: As we all get older, especially towards middle age, it is easier for our bodies to develop diseases like diabetes. This also is an uncontrollable risk factor. • Fat or greasy diet: A high fat diet is a definite risk factor. This is a controllable risk factor. You control what you eat. • Lack of fiber: A diet low in vegetables, fruits and whole grains. Fiber is a known diabetes fighter. This is also a controllable risk factor. • Lack of exercise: The benefits of exercise are enormous, especially for fighting diabetes. The lack of exercise is a definite risk factor for developing diabetes. This is a controllable risk factor. • Overweight or obesity: This is probably the major factor in developing diabetes and many other diseases. This is a controllable risk factor. Warning Signs and Complications of Diabetes A warning sign is something that tells you of possible trouble or danger. Flashing lights at a railroad crossing warn you to be careful. Your body also gives you warning signs. When you have the flu and you have a runny nose, cough or fever, your body is telling you something is wrong. Diabetes has its own warning signs that you must learn to recognize. • Urinating frequently during the day and also at night • Frequent thirst • Frequent hunger • Blurry or unclear vision • Sudden weight loss • Numbness in the feet and hands • Slow healing cuts or wounds • Always tired Having only one or two of these symptoms does not mean you have diabetes. If your vision is blurry and you have Healthy Living Activities My Food Diary My Food Diary is a great way to start eating healthy. S. by 50% in the last decade. • Diabetes rose even higher among women and certain minorities. • 11.4% of all African-Americans aged 20 years or older have diabetes. 1302 S. St. Mary’s San Antonio, TX, 78210 Telephone: 210-533-8886 Fax: 210-533-4107 www.SaHRC.org Now that you know the many different benefits of exercising, you’re ready to start working out. You may be wondering, “Will I have to spend long hours in the gym?” “Will exercising cut into my busy schedule?” Maybe you haven’t exercised in a long time and think you may not be able to work out for long periods. Bienestar has a great answer for you. Studies have shown that exercising (mainly walking) as little as 150 minutes a week: • Can lower your chance of getting diabetes by 58%. • People in these studies were able to drop their weight 5%-7%. • When compared with exercising, the best diabetes medicine lowered diabetes by only 31%. 150 minutes is not a lot of time. Think of it this way, 150 minutes is equal to only thirty minutes a day, five times a week. If you don’t think you can do thirty minutes at a time, then work out for fifteen minutes twice a day, or ten minutes three times a day. That’s as much time as a comedy show on television. If you can manage to exercise every day, the minutes fall to as little as twentytwo minutes per day! So your weekly goal should be to exercise at least 150 minutes every week. Fat has the most calories of all the different nutrients. Anytime you eat foods with too many calories and don’t exercise enough or at all, you are most likely to gain weight. Being overweight is a risk factor for diabetes, and also for diseases like heart disease, high blood pressure and high cholesterol levels. Studies have shown that most Americans eat three times the amount of fat that their bodies need. The overeating of fatty foods is the main reason for obesity. Obesity and Type 2 diabetes are tied together. The Centers for Disease Control and Prevention (CDC) reports an astounding increase of 70% in Type 2 diabetes for Americans aged 3039, 40% increase for ages 40-49 and a 31% increase for ages 50-59. Obesity means more than simply being a few pounds overweight. Obesity is defined as being 30 or more pounds overweight according to height. About onethird of the U.S. is overweight and the rate of obesity more than doubled in the 1990s. What is truly frightening is that children are gaining weight at such a fast rate. Studies show that 12% of Hispanic boys are obese and 19% of Hispanic girls are obese. While there are currently no national statistics for Type 2 diabetes in children, every year more and more children are developing Type 2 diabetes, especially Hispanic children. Unsaturated fats are much healthier and are associated with lowering cholesterol levels. However, they are still fats (more calories) so be careful and don’t eat too much. Saturated fat- This fat is found in foods made from animals (meats, chicken, milk, lard, etc.) and is usually solid at room temperature. The overeating of saturated fat has been linked to diabetes, heart disease, obesity and high cholesterol. Try eating chicken without the skin and drink low-fat or skim milk. Trans Fatty Acids- Trans fatty acids or trans fats are unnatural manmade fats. They are produced to give certain food products a longer supermarket shelf life. Trans fatty acids are found in a large majority of margarines, some vegetable shortenings, packaged foods and fast foods. Unfortunately, trans fats are believed to raise total cholesterol levels, lower the good cholesterol and actually increase the risk of diabetes and heart disease. The same way a car needs gasoline for fuel, our bodies need glucose for fuel. This fuel, glucose, allows us to walk, talk, play, think, etc. Carbohydrates come from many different foods like rice, potatoes, bread, corn and fruits to name a few sources. Carbohydrates can be simple sugars, starch or fiber. Carbohydrates are also known as “good” (complex) and “bad” (simple) carbohydrates. The good carbohydrates provide the body with longer lasting energy. The bad carbohydrates cause sugar levels in the blood to rise quickly, and provide energy for only a short time. Bad carbohydrates like candy, cookies, soda and foods made with white flour fall into this category. Most of these foods are usually labeled as “junk food.” These foods are not healthy because News Flash • Mexican-Americans, the largest Hispanic/Latino subgroup, are over twice as likely to have diabetes as non-Hispanic whites of similar age. • Similarly, residents of Puerto Rico are 1.8 times more likely to have diagnosed diabetes than U.S. non-Hispanic whites. • On average, Hispanic/Latino Americans are 1.5 times more likely to have diabetes than non-Hispanic whites of similar age. 1302 S. Unfortunately many people confuse foods like doughnuts, cookies and pre-sweetened cereals with the “grain” group. Carbohydrates have also gained a bad reputation recently. Many fad diets promote carbohydrates as causing weight gain and state that people should severely limit or stop eating carbohydrates altogether. Just remember carbohydrates are the main source of energy for the body and the carbohydrates to avoid are the bad carbohydrates. Good Carbs vs Bad Carbs Good carbohydrates are what our bodies should be receiving for energy. Good “carbs” provide our bodies with long-term energy. They provide energy more slowly because they take longer to be digested into sugar and absorbed into the bloodstream as glucose. However, it can be very difficult when shopping for groceries to decide what is a good carbohydrate. In general, foods made from white or refined flour should be limited (white bread, doughnuts, cookies, flour tortillas, etc.). White bread, for example, is digested and turned into glucose so quickly it causes an immediate jump in sugar levels. Refined and white flour foods are low in many important vitamins and minerals. Better foods are those labeled as whole wheat or whole grain. To make sure you know what you’re paying for, find the ingredient label on the product. The very first ingredient should say whole wheat or whole grain. In the case of bread, don’t be fooled just because it is brown–read the ingredients. The following is a short list of good carbs versus bad carbs. Changing Mexican Cooking Traditions It’s no wonder that Mexican-Americans are so overweight; most of us were raised with unhealthy eating habits. You know the tradition; at family gatherings everyone brings food. When someone is sick, it’s because you’re not eating enough and if you don’t finish what’s on your plate or ask for seconds, then Mom or abuelita gets offended and thinks it has something to do with her cooking. When I was a little girl, my grandmother thought I was sick because I was too skinny. “Gordita is healthy” she would say. Even cooking habits were bad. Mom used bacon grease to prepare our meals and we made tacos (flour tortillas of course) out of everything. In this issue, we will learn how to continue preparing our favorite meals at home that are tasty and have reduced amounts of fat. Many food choices and food preparation methods have been learned since greatgrandma passed on her recipes to your abuelita who passed it down to your mom and finally down to you. A big change in these areas is not very realistic for most of us. Small, gradual changes are more reasonable. In order to increase the chances of success when using new cooking methods and new eating habits, it will be important to use fat-reducing tips in two main areas. These areas are at the grocery store and in your kitchen. Creative Cooking Tips News Flash In the kitchen: • Heart disease is the leading cause of diabetes-related deaths. • Adults with diabetes have heart disease death rates about two to four times higher than adults without diabetes. • The risk for stroke is two to four times higher among people with diabetes. • About 65 percent of deaths among people with diabetes are due to heart disease and stroke. 1302 S. Busy lifestyles, long working hours and the availability of quick, cheap food has changed the way people eat. Meals have become foods we eat on the run. Unfortunately, this has led people away from healthy eating habits. Most fast food is: • High in fat • High in calories • High in sugar and salt • Low in fiber A basic Kid’s Meal - an order of chicken nuggets and french fries - derives nearly half of its calories from fat. Even worse is the current trend of “super sizing.” That’s like ordering extra fat with your fat. Fast food eating is rising and so has our obesity rate. On the other hand, when fast food chains have attempted to introduce healthier foods, the public has not responded favorably. When McDonald’s introduced the McLean burger, a lower fat burger, no one bought it and McDonald’s dropped it. The fast food restaurants are carrying healthier foods, but people must be responsible and do their part when offered healthier choices. Most fast food places now have lighter menus with less fat such as salads and grilled chicken sandwiches. Ultimately the public must decide between fast food and healthy choices. Healthier Fast Food Choices Here are some healthier choices when deciding on fast foods. This is only a partial list and will change as fast food chains keep up with consumer demand. Fad Diets At any given time, approximately 60% of Americans are either trying to lose weight or control their weight. Most Americans are attempting to do this by one of two methods, weight management or diet plans. To lose or gain weight and maintain a healthy weight you must have a change in your “manner of living.” As new diets continue to appear almost weekly, before you decide to try them, ask yourself if this is really a “change in your living,” or just another fad diet. • Fad diets are a short-term solution to a longterm problem. • They are unhealthy and unsafe. • Most of these types of diets never address the need to develop healthy eating habits or include regular physical activity. • A healthy eating plan should include wellbalanced, low-fat, high carbohydrate foods you enjoy. News Flash • Americans spend more than $30 billion annually on weightloss products and programs. • Some are based on solid nutrition science, while others are gimmicks with little or no research to show they are effective or safe. 1302 S. St. Mary’s San Antonio, TX, 78210 Telephone: 210-533-8886 Fax: 210-533-4107 www.SaHRC.org Unfortunately, many of the current fad diets encourage the exact opposite and suggest you eat foods that are high in protein, high in fat and limit or eliminate carbohydrates. Our bodies need different nutrients, vitamins and minerals, and no one food or food group contains all. This type of diet can have both immediate as well as long-term health risks. Weight loss is a gradual progression. Remember that being overweight doesn’t happen overnight and neither does weight loss. Health Risks of Fad Diets Fad diets can have both immediate and long-term health risks such as: Immediate Health Risks Nutrient deficiencies – Due to the lack of variety and balance, you may not be getting the proper amount of fiber, vitamins and minerals needed to fight off disease and maintain good health. Constipation - There is also the increased risk for constipation and other stomach problems because of the lack of fiber. Bad Breath - As silly as this may sound, bad breath is a very common side effect. Long-Term Health Risks Heart Disease - Increased risk for heart disease due to the increased intake of foods high in animal protein, which increase cholesterol and saturated fat levels. Cancer - Increased risk for cancer due to the lack of fiber (eliminating or limiting grains, fruits and vegetables). Osteoporosis - Increased risk of osteoporosis because of the excess protein from animal sources that may cause an increase in calcium loss in the urine. Kidney Disease - Increased risk for kidney disease. The excess protein also places an additional burden on your kidneys and forces them to work harder.
